Great things come in threes.. introducing you to our third release!
For us, there is no Master of Malt or Spirits Manager, instead we work very much as a collective – good old fashioned tastings with friends, family and associates to select the whisky we want to bottle.
We are proud to bring you our third release of three bottlings. We feel these three whiskies truly showcase how diverse sherry cask matured whisky can be. Each has been uniquely matured in casks ‘seasoned’ by differing types of sherry for differing periods of time.
We are delighted to announce some new UK retailers have chosen to fill their shelves with our third release alongside many of our orginal retail partners too.
In addition, you will find us at a growing number of bars across the UK where we will be hosting a number of tastings. Keep your eyes on our socials to find out when are where!
Distilled in 2013 and finished in a 1st fill Oloroso Sherry Hogshead for over 2 years. With a ‘thick’ nose of dark maple syrup, treacle and dark berries with further fruits and berries with wood spices on the pallet. We feel this is a great example of a high quality sherry finish, creating a well balanced yet unmistakable ‘sherry bomb’.
Distilled in 2012 and finished in a 1st Fill Palo Cortado Barrique. A nose initially full of citric fruit develops into sweeter, juicer fruits – particularly with water. This theme continues on the palate. A truly unique whisky with an array of flavours not usually found in single malts. The Palo Cortado sherry finish brings a great layer of added depth and complexity.
Distilled in 2008 and matured in a 2nd Fill Sherry Hogshead since distillation. With aromas of berries and tropical fruits and slight tannins coming through the burst of fruit flavours on the palate – this whisky is packed with flavour. Although shy about it’s origins – this whisky is anything but. 14 years maturing in a 2nd fill cask has brought a superb balance between sherry and wood influence.
